Homemade Marshmallows*This weekend I made marshmallows. BEHOLD! Gaze upon their wonderous pink and squidgy forms. Almost pure sugar, in a cube. Sickeningly good. I only recently learned it's possible to make marshmallows at home, they're surprisingly simple. Thank you to Darina Allen and her wonderous book "Forgotten Skills of Cooking". The most important thing you need for this is a sugar thermometer - it's vital that you wait for the sugar and water mixture to reach hard boil temperature, otherwise it will all go terribly, awfully wrong. Following that, you add in some gelatine then mix it all up with some whisked egg whites. I threw in a bit of red food colouring at this point. Et voila! Two hours of setting time later, you have homemade marshmallows.
